You will need:
- 1/3 c honey from The Honey Jar
- 1/2 c full fat coconut milk
- 1/8 tsp fine sea salt
- 1-1/2 c desiccated coconut
- 1/4 c almond flour
Instructions:
- Heat up honey in a small pot on low heat. Allow it to simmer gently. When it starts to bubble, vigorously whisk in coconut milk. Simmer for about 3-4 minutes, stirring so it doesn't boil over.
- Take off heat, stir in salt and desiccated coconut. Mix well, then stir in almond flour.
- Allow mixture to cool for about 20 minutes. Using 1 oz scoop, portion out onto a parchment-lined baking sheet 2 inches apart. Bake at 325°F for 20 minutes until the cookies are toasted light brown.
- Let cool completely before eating.
